I decided to try this cake because I was looking for something a little different and summery. I have
also been intrigued by the olive oil cake recipes I have seen and this was the perfect recipe.
Cake is very moist and flavorful. I would suggest topping with something crunchy or incorporating chocolate somehow if
you are into that kind of thing.

Ingredients
Candied Oranges and Syrup
- 1 cup sugar
- 3/4 cup honey
- 1 orange thinly sliced
- 2.5 cups water
Olive Oil Cake
- Preheat oven 350F
- 9" springform pan brushed with olive oil-
- 1/2 cup olive oil
- 1 cup flour
- 1/2 cup pasta flour (semolina)
- 1 1/2 t baking powder
- 1/4 t baking soda
- 1 t ground cardamom
- 1/2 t salt
- 1/2 cup sugar, divided
- 3 large eggs, separated
- 2/3 cup whole milk yogurt
- 1 1/2 t orange zest
- 1 t vanilla
- Directions
Candied Oranges and Syrup
Combine all ingredients except oranges.
Bring mixture to boil and when sugar dissolves, reduce and add oranges.
Let cook on med/med-high for 40 minutes until mixture reduces to about 3 1/4 cups.
I had to add a bit more sugar because it did not get very syrupy, but I reduced the water above to 2.5 cups instead of 3.
Place oranges on parchment paper on wire rack.
Let oranges and syrup cool for later use.
Olive Oil Cake
Mix olive oil and 1/4 cup of sugar for about 1 minute
Beat in egg yolks until well combines
Add flours, baking powder and soda, salt, cardamom.
Then beat in yogurt, orange zest and vanilla.
In a separate bowl, beat egg whites until soft peaks form, then add 1/4 cup of sugar until stiff peaks form.
Fold egg whites into batter.
Pour into springform pan and tap a few times to even and remove air.
Bake for 25 minutes.
Remove and piece cake all over with holes and pour 3/4 cup of syrup over cake, then pour 3/4 more once previous has absorbed.
