I have said before that I don't believe in "healthy" desserts. This is mostly because I don't want to ever give up sweets and luckily I
haven't experience any medically necessary reasons to need to, while I know many do. I eat healthy most of the time and I often need
something sweet.
Depending on how much I have indulged of late (see: eaten half a pie yesterday), I would sometimes prefer a healthier option. This recipe is a product of that and
can really be tailored to individual preferences with the fruit type and topping.
Raw Strawberry Cream Bars

Ingredients
Raw Strawberry Cream Bars
Base
- 1 cup whole pecans
- 1/2 cup unsweetened coconut flakes (large)
- 1 cup Medjool dates (about 12)
- 1/2 t salt
Strawberry Cream
- 2 cups raw cashews (soaked in water overnight)
- 1 can (13.5 oz) coconut milk (full fat)
- 1/2 cup maple syrup
- 2 T coconut oil
- 2T chia seeds
- 1 cup fresh or frozen strawberries (about 6-7)
- 1 cup freeze-dried strawberries
- 1 t vanilla extract
Topping
- 14oz High-quality trail mix
- 2 T honey
- Directions
Base
Combine all ingredients in food processor until forms into ball. Press into the bottom of a wax paper-lined 9x13 pan. Freeze for 1 hour.
Cream:
Blend all ingredients in high speed blender (like Vitamix) until smooth. Pour over date base and place back in freezer for 30 minutes, then remove and top with trail mix and drizzle honey over top. Put back in freezer for at least 5 hours to set. Remove from freezer and let sit for 10-15 min, cut and serve. Store in freezer or fridge.
